The case against refrigerating chocolate-covered dates
Most people’s instinct is to refrigerate anything perishable. For chocolate-covered dates, this often makes things worse:
- Moisture. The fridge is a humid environment. Chocolate absorbs moisture and develops sugar bloom — a gritty, grainy coating.
- Odour absorption. Chocolate picks up odours from nearby food. Even an airtight container is not fully odour-proof across weeks in the fridge.
- Condensation on removal. Taking a cold box into a warm room causes condensation, which accelerates bloom and stickiness.
If your home consistently runs above 26°C with no air conditioning, a brief stint in the fridge in an airtight container is the lesser evil. When serving, bring the dates to room temperature for 30 minutes first — cold chocolate suppresses flavour.

Bitter or rancid smell. The nut inside — pistachio, almond, walnut, cashew, macadamia, or hazelnut — has oxidised. If opening a date releases a sour or metallic smell, discard it. The date itself is fine but the nut has turned.
Extreme dryness and shrinkage. Medjool dates that have dried out considerably will feel hard and leathery rather than yielding. Safe to eat, but the experience is poor. This usually means the box was open or stored too long.
